Chess pie is a custard--think pecan pie without the pecans. Most people make lemon chess pie--my grandmother made a deadly plain ol' chess pie (and I myself make a hell of a good pecan pie, with all sorts of yummy extras in it, like rum and chocolate...). Like most good Southern desserts, it's death by sugar. Virgil's makes a chocolate chess pie with a really rich chocolate flavor. Mmm...
